A Persian Kitchen

Maryam Madaresi

“How do you make this?” is a question Maryam Madaresi is used to hearing in response to her Persian cooking. In answer to everyone’s questions, Maryam decided to start an Instagram account where she shares traditional Persian recipes, and some of her own, with her followers all around the world. Now she is introducing her first cookbook of Persian food, just as it is made in any normal home kitchen. It includes dishes with the colours, aromas and flavours of ingredients like saffron, sumac, pomegranate and fresh herbs. Central to the meals is, of course, tahdig – crispy rice that many of us will recognise. But the book is bursting with other recipes for authentic stews, skewers, soups, breads, stirfries and much more. All well-cooked, succulent and absolutely mouth-watering.
