The Southern Italian Kitchen

Sanna Töringe, Hannu Sarenström

The Southern Italian Kitchen follows Hannu Sarenström and Sanna Töringe’s adventurous and sensual culinary journey through the southernmost parts of Italy. We meet the spring in Sicily, the summer in Apulia, the autumn in Calabria and the late autumn in Basilicata and taste the treasures that nature and the seasons have to offer. As we make exciting dishes together with talented chefs in restaurants and small guesthouses, we soon learn that we cannot get very far without pane e pomodori, bread and tomatoes, olio, aglio e peperoncino, olive oil, garlic and chilli, or acciuge, olive e capperi, anchovies, olives and capers. This Mediterranean diet, which is so rich in vegetables and olive oil and so low in meat, is considered to be extremely healthy.

The book contains about 140 recipes, some of which are so simple that they feel like you are doing magic tricks with your saucepans while others require more pazienza e tempo, time and patience. The Southern Italian Kitchen is also richly illustrated with photographs of the countryside, the people and the food of the area.
