Climate Friendly Meals
Climate Friendly MealsPaul Svensson, Christofer Ekman
We throw away more than a third of the food produced worldwide: a terrible waste of both resources and money, and a large strain on the environment. So, it is time to take action against food waste, and award-winning chef Paul Svensson knows just how to do it. He started the pop-up restaurant Retaste where discarded food was made into delicious meals, and in this cookbook you will find 80 climate-smart recipes and tips that reduce the food waste in your own home.
Paul Svensson likes simple, sustainable and vegetable-based food and is passionate about inspiring a food philosophy with all things green at its core. He has represented Sweden in the Bocuse d’Or and has worked at several of the world’s and Sweden’s best gastro-pubs. Since 2014, together with Christofer Ekman, he runs the restaurant at Fotografiska in Stockholm – which in 2017 was named the world’s best museum restaurant. Paul has also written several cookbooks.
